Boiled chestnuts (Bam: 밤) recipe by Maangchi


How do you like to eat chestnuts? In Korea, we use chestnuts in many tasty ways. We eat them fresh, peel off the skin and enjoy. We also get sliced thinly and used as a topping, or added to things like kimchi or special dishes like galbijjim (braised beef short ribs). We even put them in cookies and cakes for a yummy twist. You can roast them, boil them, or cook them in different dishes. Today, I want to share my favorite way of cooking and enjoying chestnuts, Korean style.

Ingredients

  • 3 to 4 cups of medium-sized chestnuts

Instructions

Prepare the chestnuts

  1. Wash the chestnuts thoroughly by rubbing them with both hands, changing the water several times.
  1. Drain the chestnuts.

Boil the chestnuts

  1. Place the washed chestnuts in a heavy pan or pot.
  2. Add enough water to cover the chestnuts, with about 1 inch extra.

  1. Cover the pan and cook over medium-high heat for 30 minutes.

  1. Open the lid and stir the chestnuts with a wooden spoon.
  2. Reduce the heat to medium and continue cooking for an additional 10 minutes.

Drain and rinse

  1. Remove the pan from heat.
  2. Drain the boiled chestnuts and rinse them under cold running water.
  3. Allow the chestnuts to drain thoroughly.

How to Eat

  1. Place a cooked chestnut on the cutting board.
  2. Use a kitchen knife to carefully cut into the tip of the chestnut.
