Spicy Roasted Asparagus
Take advantage of springtime when asparagus starts appearing in large quantities. Baked asparagus is easy to cook and does not take long to roast in the oven. Dress it with some olive oil and red pepper flakes for a slightly spicy side dish. Serve with some hard-boiled eggs for extra protein.
Ingredients
1 bunch asparagus
3 hard-boiled eggs, halved
1 tbsp extra virgin olive oil
2 cloves garlic, minced
1/2 tsp red pepper flakes
1/2 tsp salt
Freshly ground pepper, to taste
Instructions
1. Preheat the oven to 400 degrees F. Trim the ends off the asparagus and discard.
2. Place the asparagus on a rimmed baking sheet and drizzle with the olive oil. Add the minced garlic and red pepper flakes and stir well to coat the asparagus. Sprinkle with salt and pepper. Roast for 10-15 minutes, turning once. To serve, top the asparagus spears with the hard-boiled eggs.
