The Palladian-fronted red-gold limestone Hadspen House dates to 1687. The Newt in Somerset, between Frome and Yeovil, holds “cyder” tasting sessions as well as butchery classes. You can also watch the resident cheesemaker at work on her buffalo mozzarella made with olive oil from the hotel’s sister estate in Babylonstoren, South Africa. Its Botanical Rooms restaurant features British classics like wood pigeon and venison. It is considered one of the best hotels in the UK.
Its gardens have been entirely redesigned by Patrice Taravella. The centrepiece is the egg-shaped Parabola walled garden, now planted with 460 trained British apple trees, of 267 varieties, arranged in a Baroque-style maze.
