There’s a simple trick for getting scrambled eggs that stay fluffy and creamy every time — and it doesn’t involve adding milk or cream.
TikTok food creator Max McCann, better known as @mealswithmax, says the key is following an ‘on and off’ approach with the heat. In his video sharing his own “secrets to perfect scrambled eggs”, he says “they’re fluffy, creamy and done in under 5 minutes” – as long as you keep taking the pan off the heat and putting it back on, while stirring continuously.
He explained: “Eggs are super easy to overcook. So moving it on and off the heat means you can cook it slowly and steadily without them overcooking.
“There is residual heat in the pan, so even when you do take it off the heat, it’s going to continue to cook. But you’re going to have a lot more control over the heat.”
He also notes that adding crème fraîche or sour cream at the end can make the eggs feel even richer, but stresses it’s optional and the method works perfectly well without anything extra.
He said: “Many people think that adding milk is going to help make it much more for me, but you don’t need to add any milk at all and I find this much better without it
“Sometimes I like to add crème fraîche or sour cream to the eggs when they’re done. However, they’re already nice without it. It just depends, if I’ve got some in the fridge I’ll use it, but if not, it still tastes delicious without.”
McCann, who is from Tadley, built a huge online audience under the Meals with Max name after he began posting cooking content during the Covid pandemic, having been laid off from his job. His fast, no-fuss recipes quickly took off, and he has since gone on to become a bestselling cookbook author.
