This week’s meal plan is all about easy dinners with big flavor and minimal cleanup. You’ve got juicy baked chicken thighs, creamy chicken Caesar pasta, tender Mongolian beef, sweet and savory air fryer salmon, and cheesy one-pan cheeseburger rice to finish out the week.

What’s for Dinner?
These dinners are easy, family-friendly, and full of flavor. Most are complete meals on their own, but you can always round things out with a simple side like garlic Brussels sprouts or 1-hour dinner rolls.
I put out a new weekly meal plan every week, and you can always swap meals around if needed. If you’d like to get them each week without having to look for them, my newsletter is the best way.

Baked Chicken Thighs
Baked Chicken Thighs are tender and juicy and baked in an AMAZING glaze mixture of Italian seasoning, Dijon mustard, sweet honey, and garlic cloves. This is a MUST make family meal!

Chicken Caesar Pasta
Creamy chicken Caesar pasta is an easy skillet dinner with tender chicken, parmesan, Caesar flavor, and crunchy croutons on top.

Slow Cooker Mongolian Beef
Tender pieces of flank steak are slow cooked in the tastiest sweet and savory sauce. This slow cooker Mongolian beef is melt-in-your-mouth perfection and bursting with flavor. Quick and easy to prepare and one of our favorite slow cooker meals!

Air Fryer Salmon
Melt-in-your-mouth brown sugar garlic air fryer salmon is juicy, tender and full of flavor. Salmon is so good, especially when it’s cooked right, and the air fryer makes it perfect every time! It’s an easy, hands-off way to make a scrumptious meal.

Cheeseburger Rice
All the flavors of a cheeseburger, no bun required! This cheesy, savory cheeseburger rice comes together fast and is a hit with the whole family.
Why is Meal Planning Helpful?
- Saves time: No more 5:00 panic. You already know what’s for dinner, what you need, and how long it’ll take.
- Saves money: Shopping with a plan makes it easier to buy what you’ll actually use and stretch leftovers into another meal.
- Less takeout: When dinner is planned and groceries are in the house, skipping the drive-thru gets a lot easier.
I made this as easy as possible by providing a FREE shopping list you can print to make shopping better and more economical.

Meal Planning with Leftovers
I only meal plan Monday-Friday because we sometimes have things going on over the weekend, or I have leftovers that we can have to finish off the week! If you do have leftovers, make sure to store them properly in an airtight container in your fridge.
